Vegan Donuts

Baked Vanilla Donuts 1 4

  • 2 cup + 2 tbsp gluten-free flour 1 tsp baking soda
  • 1/2 cup of sugar
  • 1 1/4 cup of Almond milk
  • 1/4 cup refined coconut oil, liquid.
  •  1 tsp apple cider vinegar or lemon juice.
  • 1 tsp of almond extract or vanilla
  • 1/2 tbsp baking powder
  • 1/4 tsp of Salt
  • For toppings, you can use any topping of your choice, chocolate, sugar glaze, coconut, chip cookies, etc.

  1. Preheat the oven to 400F. Drizzle oil on the doughnut pan and set aside.
  2. In a large bowl, mix together flour, baking soda, baking powder, salt, and sugar. In another small bowl, stir the wet ingredients; milk, vanilla or almond extract, oil or butter, lemon juice. Mix the wet ingredients with the dry flour mixture. Beat until smooth.
  3. The batter looks like a cake batter; not too thick nor too thin. Put the dough in a piping bag or a zipper bag with cut corners, and then place the dough on the doughnut tray, filling it about 3/4 full.
  4. If not, you can also use a spoon. Be careful not to overflow, because the donuts will bake and rise like cupcakes. Bake for 11 to 13 minutes, until the edges are light golden brown. Let cool in the pan for 5 minutes, then carefully transfer to the grid.
  5. Dip the donuts into your favorite frosting and then topping of choice. i.e cookies, chocolate chips, etc.
