Ingredients
- 1 1/2 c. sifted cake flour
- 1 cup sugar
- 1 cup light olive oil
- 1 cup Strong brewed coffee
- 1 1/2 tsp. vanilla extract
- 1 cup cocoa
- 1 tbsp. balsamic vinegar
- 1 tsp. baking soda
- 1/2 tsp. salt
Instructions:
- Preheat the oven to 400 degrees. Lightly brush an 8-inch round baking pan with softened butter, then sprinkle with all-purpose flour.
- Combine baking powder, cocoa, baking soda, sugar, and salt in a large bowl and set aside.
- Mix the coffee, oil, vanilla, and vinegar together, add the flour mixture and stir until smooth.
- Pour the dough into the prepared pan and bake on the middle rail of the oven until the wooden skewer comes out clean when inserted in the middle.
- Let it cool down completely on a metal rack.
- Serve the cake, iced with about 1 cup chocolate glaze. Cake can also be served plain alongside whipped cream or coffee ice cream.
