Vegan Chocolate Cake


  • 1 1/2 c. sifted cake flour
  • 1 cup sugar
  • 1 cup light olive oil
  • 1 cup Strong brewed coffee
  • 1 1/2 tsp. vanilla extract
  • 1 cup cocoa
  • 1 tbsp. balsamic vinegar
  • 1 tsp. baking soda
  • 1/2 tsp. salt


  1. Preheat the oven to 400 degrees. Lightly brush an 8-inch round baking pan with softened butter, then sprinkle with all-purpose flour.
  2. Combine baking powder, cocoa, baking soda, sugar, and salt in a large bowl and set aside.
  3. Mix the coffee, oil, vanilla, and vinegar together, add the flour mixture and stir until smooth. 
  4. Pour the dough into the prepared pan and bake on the middle rail of the oven until the wooden skewer comes out clean when inserted in the middle. 
  5. Let it cool down completely on a metal rack. 
  6.  Serve the cake, iced with about 1 cup chocolate glaze. Cake can also be served plain alongside whipped cream or coffee ice cream.
