Peanut Butter Fudge

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup coconut oil melted
  • 2 cups desiccated unsweetened coconut
  • 1 tsp pure vanilla extract
  • 3-5 Tbsp maple syrup or stevia
  • Crushed peanuts
  • Coconut flakes

Instructions:

  1. Set aside the standard 9″ by 5″ bread pan with parchment paper, If necessary, scrape off the edges.
  2. To a blender add the desiccated coconut and blend on high until a creamy butter is formed – about 4 minutes then add the melted peanut butter and coconut oil and stir again. 
  3. Then add 1 tablespoon of maple syrup at a time until it reaches the sweetness you want. Adding too much maple syrup will cause the mixture to harden and thicken. In this case, dilute it with a little melted coconut oil. Then add the vanilla and add a pinch of salt if you want.
  4. Taste it, adjust the flavor as needed, add more salt or vanilla for the overall flavor, or add maple syrup or stevia for sweetness. Pour the mixture into the bread pan and distribute it evenly. 
  5. Top with chopped peanuts or coconut, and freeze them for about 15 minutes until they are hard. Then use a hot knife to cut into uniform squares
