Cheese Tacos

  1. Olive oil
  2. 2 ears of corn, husked
  3. 1 small red onion, cut into 1/4″-thick rings
  4. Salt and pepper
  5. 1 pound halloumi or other grilling cheese, sliced into 16 planks 
  6. 8 small tortillas
  7. Sliced avocado, fresh tomato salsa, cilantro, and lime wedges (for serving)


  1. Prepare a roast pan over medium-high heat; fully grease the grill with oil
  2.  Lightly coat the corn with oil and season with salt and pepper. Put the onion and butter in a small bowl and season with salt and pepper. Grilled both by turning them frequently until they are soft and charred in some places. Corn takes 10-15 minutes and onions 4-5 minutes. Let the corn cool down a bit.
  3. Brush the cheese with oil, season with salt and pepper, and roast, turning once until it is browned and warm, about 2 minutes per side. 
  4. Heat tortillas on the surface of a microwave or cold grill until they are tender and pliable. Divide the cheese into tortillas, then add corn, onions, avocado, salsa, and cilantro. Serve with lemon wedges.
